12-week transformation...day five

Here are some facts about today...

1. Today is Friday.
2. Today was a weigh-in day
3. I weighed in at 142.2 pounds...meaning I lost 3.4 pounds.
4. I was discouraged I wasn't back at 138.0...why?
5. I was discouraged because I denied my flesh this whole week and really struggled while doing it and didn't see the results I wanted.
6. #5 was my flesh raging out.
7. I was on plan the first half of the day.
8. Around late afternoon, I sort of caved in...ate a non approved lean and green meal. There was some lean and green, but also some other off-limits food as well.
9. My health coach out of nowhere called me and left a message right after I finished eating dinner encouraging me to keep moving forward. (She did not know I ate out).
10. I forgave myself for going off-plan and moved on.
11. Decided to go to church and had the most amazing night ever. I started out not really into worship and by the end of the night I was raising my hands so in awe of my Lord and Savior.

Those are the facts and I am ready for tomorrow...despite my ups and downs this week.

pushing forward

Today was the first day I have felt totally back on plan. I had no cravings and was able to pass by candy and other goodies with ease. I thank the Lord! It feels great! I am packing to go and work at the Missions Conference in Murrieta, CA, so I am going to keep this post short. :)

Breakfast
Woke up around 9 this morning and watch the live streaming of the Take Shape For Life Conference going on in San Diego. Learned so much! While watching, I ate on a smores crunch bar along with some coffee.


Morning Snack
A little while later I made a french vanilla shake and drank that while cleaning the kitchen.


Lunch
After cleaning I went to the store to stock up for some lean and green meals to bring with me. I had a gift card to Rubios from Christmas and it is right next to the store, so my parents and I went there to grab a bite to eat. I ended up opting for the steak chopped salad with no chips or dressing. So good and filling!


Afternoon Snack
I wasn't really hungry at this point but had the munchies, so of course I still ate. I sipped on a coffee milkshake...I also added some extra instant coffee to give it a little boost.


Dinner
My stomach was growling by the time dinner rolled around so I ate some chili nacho cheese puffs while drinking a bunch of water.


Dessert
I went to church tonight, so after I got home it was time to eat my last meal of the day. I know coffee tends to keep you up, but it was cold outside and I was craving a cappucino. So I made a calorie burn cappuccino and am now calling it a night.

just look up


Today was a weigh in day...now, I am still losing the weight I gained over the holidays...but I am still moving forward! I told you I gained 12 pounds and as of this morning I have lost 5 of those pounds bringing my weight to 145.8 pounds.

With that said, I saw this quote and knew it was a perfect fit for today's post. I need to look up...not behind at my mistakes, or the future. Looking up puts me in the proper perspective.

Breakfast
Made a mocha shake with about a teaspoon of instant coffee added to it.


Morning Snack
A couple hours later my stomach started to rumble and I made a chai latte. Totally hit the spot.


Lunch
I am out of my normal salad ingredients, so I made an omelet which included egg beaters, cottage cheese, light cheese, spinach, and kale. It looks ugly, but tasted amazing!


Afternoon Snack
Lunch kept me quite full but I was still feeling a bit munchy and had some brown sugar and cinnamon cereal crunch.


Dinner
For dinner I made a mock java chip frappuccino. Added some instant coffee to a chocolate chip cookie soft bake packet and blended it all together with water and crushed ice.


Dessert
Took dessert with me on the go today. I just cut up a cinnamon roll crunch bar and ate it during church.


So...I kept today's post short and sweet because I didn't want to overshadow the profound quote. Think about it today and just look up!

day sixty-two...it's my grandma's birthday!


It was my grandma's birthday today! The picture above is of me, my grandma, and my mom (taken last year)...three generations!

My grandma is the best grandma ever...seriously. She is also like a second mom to me. I love her dearly. I went out to lunch today with her, along with my brother and my grandpa, to celebrate her special day of birth. It was just a sweet time of fellowship and catching up. She lives nearby, so it's always nice to get together whenever possible.

Breakfast
Same old breakfast this morning...eggnog shake. I know I get pretty repetitive with my foods, but hey, when you like something, why change it?


Morning Snack
I had a chocolate chip cookie dough chewy bar this morning, and I paired it with some coffee so I could dip it in there. The hot coffee melts the chocolate a little bit creating this delicious holiday-like treat!


Lunch
As I mentioned earlier, I went out to lunch today for my grandma's birthday. Well, one of her favorite places to eat is called The Habit. So, I looked up the menu online beforehand and found out what I was going to order before I even got there. Looking at the menu too long at a restaurant always causes me problems. So, with that said, I ordered a ceasar salad (with no croutons and dressing) and added some tri-tip to it. The meat was so tender and juicy, there was absolutely no need for dressing.


...and here is a quick snapshot of my grandparents. Aren't they the cutest? ;)


Afternoon Snack
Steak usually tends to keep me quite full, but I was fairly hungry by the time the next snack time came around. I stuck to something simple and drank a chai latte. Sort of helped to settle and digest all that meat I had.


Dinner
I was out and about during dinner, so I just snacked on some brown sugar cinnamon cereal crunch. Have you noticed how crowded it is out there?! There are people everywhere you go! I only went to Target and Trader Joe's and it took me well over an hour and a half to get my shopping done! So crazy.


Dessert
Once I finally did make it home, it was time to go to church. After church I made some mini brownie bites using the brownie soft bake and called it quits for the night. I was exhausted. PS...these brownie bites were amazing! I will post the recipe soon. :)


I hope you have some fun while doing your shopping this weekend. Remember to keep a smile on your face at all times...it will only soften those who are upset and frustrated. Just simply smile! :D

day fifty-five...when you're at your lowest

I am sick...still. Most of my friends have come down with a cold this past week and I thought I was the lucky one who surpassed getting sick. I was wrong.

So anyways, I woke up this morning with a sore throat and just felt like my face was going to explode. I have to tell you since I couldn't last night, but as I was getting in my car yesterday morning, I turned KWVE on and Pastor Chuck Smith was teaching. It was too funny because as soon as I turned on the radio, Pastor Chuck was saying something to this effect: "Let's say you are not feeling well. Watch out because that is when the Enemy attacks. It is when we are at our lowest that he comes in and pounces." Well, there you have it...I better be in the Word today!

Breakfast
Nothing new to report for breakfast...except for the fact that is was a chilly 39 degrees! I am a wimpy Californian, I know. Once I did manage to leave my warm and cozy bed, I started to get ready and made a mocha shake and enhanced it even more by adding instant coffee to it.


Morning Snack
My new shipment of Medifast came in yesterday! I opened it up right away and decided to sip on a calorie burn cappuccino (which I ran out of a few days ago) for my morning snack. I was going to make a cup of coffee anyways, so why not just make it one of my meals. And although it was beyond divine, I did end up burning my tongue with the first sip...so that wasn't very fun.


I also got this sweet stack of recipe cards that are all holiday themed! I love it and cannot wait to try some of them!


Lunch
Back to the same old meal for lunch. I made a salad topped with a chili lime chicken burger and shredded Parmesan cheese as well as a drizzle of light chipotle ranch dressing. Simple but delicious.


I also paired my salad with a diet ginger ale...I needed a little splurge today.


Afternoon Snack
My stomach was rumbling by the time my next meal time came around. I ended up snacking on some brown sugar cinnamon cereal crunch for about 20 minutes. These not only fill you up buy they last a while too!


Oh...and I had another cup of coffee with the cereal...it's just one of those days. Isn't the white Christmas tree pretty! It's up in our office area and I love walking by it every time I use the restroom or walk to the kitchen.


Dinner
I was in the mood for some cheesy goodness tonight. So I whipped up a batch of macaroni and cheese and added a small pinch of shredded Parmesan cheese to thicken it up and give it a touch more flavor. The mac and cheese is pretty good when I add just the smallest thing to it. The picture looks fairly appetizing, right?! I think it looks a tad better than my other mac and cheese photos. :P


Dessert
Cut up a smores crunch bar to munch on after church tonight. I stayed for a while talking so it was a perfect "pop in your mouth" treat. No one noticed or at least cared (I think), which is a double bonus!


So, I will admit that I have had better days, but the Lord is still on the throne, so I have nothing to complain about...although I do admit to complaining several times today. I am praying that the Lord would change my heart and help me to be thankful in all things...the good and the bad.

day fifty-two...doubt

Yesterday at my second Christmas party, our college pastor, Abraham deAlba spoke on doubt and it hit me like a ton of bricks. Me? Doubt? Never. But...I was wrong. I have been doubting God unknowingly, thinking certain things will just never come to pass. I am a doubter. Simply put.

I need to remember that the Lord has a plan. Sure, I may not know when it will come to pass, but He does and that is all that matters. Easier said than done, right? I want things to happen right now...today. However, I cannot doubt God. I just can't. There is no sound reason why I should. I mean, He is the God of the universe and knows every little detail about me, and I want to doubt Him? I am crazy!

So that is it...no more doubting. No more questioning God. I need to practice patience and rely fully upon the Lord and trust in His timing. He will make my desires come to pass if it is His will.

Now that we have that settled, let's move on to my eats for the day!

Breakfast
Had a lovely morning sleeping in today. Once I woke up, I made a mocha shake and drank it once again while curling my hair...I think I am going to make a habit out of this.


Lunch
After church I was hanging out with a friend at Portola Coffee Lab and while drinking an iced coffee I had a bag of cheese pizza bites. Honestly, not the best pairing, but still good when eaten by itself.


It was also my friend's first "hipster coffee" so I had to snap a picture of her taking a picture of her beautiful mocha...she's the cutest. Love you Kim!


Afternoon Snack
Once I got home from my coffee visit, I cleaned the kitchen and then had a chocolate crunch bar. I then started to put together and cook my dinner.


Dinner
I made a new lean and green meal for dinner! I am still testing it out, but I am hoping to master the recipe by Christmas. I made a turnip gratin. Not my favorite to be honest...it still needs a bit of tweaking. Keep a lookout for the recipe soon.


Dessert
I had a calorie burn cappuccino as soon as I got home from church. Don't know why, but I was just in the mood for a nice hot cup of coffee.


Dessert #2
I had some friends come over after church and while I made them some cookies, I also made myself some chocolate chip pancake cookies. They were really good...very similar to a doughnut hole. I will post the recipe soon.

day forty-four...take my life, take all that I am

Today I want to keep it short and sweet. I went to church tonight and the worship leader sang a song that really spoke to me. Here is the youtube video which subtitles the lyrics...it is called "Like an Avalanche" by Hillsong United.


Powerful words, right? I encourage you to make that your prayer today..."Take my life, take all that I am, with all that I am, I will love you. Take my heart, take all that I have, Jesus how I adore you."

Breakfast
My lovely cats decided to wake me up around 5am this morning, but I was able to get back to bed and sleep in until 10. Sleep is a wonderful thing. Once I woke up, I made myself a dark chocolate shake.


Morning Snack
After I drank breakfast and read my Bible, I started to clean the kitchen and the kitchen floor. In the middle of my cleaning, it was time to eat my morning snack...or really an afternoon snack. Instead of having my lean and green meal (since it was lunchtime) I decided to have the honey mustard pretzel bites so I could easily stick one in my mouth while continuing to clean.


Lunch
After I finished cleaning, I headed over to Trader Joe's and did a little food shopping for the week. I bought some lettuce, shredded Parmesan cheese, and chicken burgers, as well as some probiotic pills. Once I got back home, I made a salad with romaine lettuce, a pizza burger, shredded Parmesan cheese, and light chipotle ranch dressing. Delish!


Afternoon Snack
A few hours later, I made myself a calorie-burn cappuccino. Instead of mixing it with water, I tried mixing it with black coffee. I have no idea why I haven't been doing this the whole time. The cappuccino was so good! I will be probably be doing this all the time now. Maybe I will try it with the chai latte...or add some espresso shots to it.


Dinner
A little while later, I went to church and wasn't able to eat until after. I was a tad past three hours, but by only about 15 minutes. Saturday nights at Calvary Chapel Costa Mesa are so amazing. If you ever have time on a Saturday night, I highly encourage you to come. I wasn't going to come tonight actually, but the Lord put it on my heart to go and I am so happy I listened to Him. Click here to listen or watch past messages. After the study I drove home and while waiting for a parking spot, I snacked on a s'mores crunch bar (thankfully I packed it in my purse).


Dessert
I was up for a while, so when it was time to eat dessert, I was kind of hungry and thankful I had one more meal to eat. I sipped on a coffee milkshake and then called it a night. I just love these milkshakes and can't get enough of them. Really feels like you are "being bad".


Oh and a little side note...you may have noticed that I didn't post a weight update yesterday, and well, that is because I didn't bring my scale with me on the road trip. So...I will just wait until next Friday to weigh myself and update you all.

My kitties also say hello and goodnight!

day thirty-three...the great pumpkin


Thanksgiving is quickly coming up and surprise...pumpkin is everywhere. It seems like everything has pumpkin in it. For some, this is not a problem...but for me, it is...or at least used to be.

I love all things pumpkin...pumpkin bread, muffins, pie, pancakes, scones (my all time favorite), lattes, you name it. Even this year, before I started Medifast, I was eating everything out there! Now, I am able to say no and instead eat my own Medifast approved snack.

If I can resist the pumpkin temptation, so can you. Seriously, I am the biggest pumpkin fan out there (ask my family), and I am, by the beautiful grace of God, able to easily say no to all things pumpkin. It just ain't worth it. So this Thanksgiving, say no that pumpkin pie and instead whip up a pumpkin shake using a french vanilla shake packet and a few drops of the Capella Pumpkin Flavor drops. Chances are, people will want what you are having instead of that pie. ;)

Breakfast
Had a strawberry shake this morning and it was goooood. I am really liking everything lately. Love it!


Morning Snack
A couple hours after breakfast I had a chai latte. It was cloudy and cold at the time and it warmed my shivering body. The drink is a tad powdery even after you mix it, but still delicious. A wonderful alternative to a fat laden chai tea latte, which is also loaded with sugar.


Lunch
I am so predictable when it comes to my lean and green lunches...today I had the same romaine salad but topped it with a vegetable burger (chopped up) from Trader Joes. It sort of tasted like an egg roll for some reason. That's a good thing...the egg roll taste. At least to me it is.


Afternoon Snack
For my snack this afternoon I finally finished up the bbq bites from my last order. I didn't order more, so these were officially my last ones.


Workout
I think I am going to be working out after work. It is so hard for me to get up in the morning let alone having to get up and workout. So, today after work I did a 30 minute toning workout. I used the workouts from one of the SHAPE DVD's. I love it. The moves are simple, but it still works your muscles and let me tell you...you will feel it the next day. That's a promise. ;)


Dinner
After my workout I made some macaroni and cheese, and I didn't overflow it! All that cheesy goodness (thankfully) stayed inside the mug. I apologize because there is just no way to snap a flattering picture of this meal, but here it is.


Dessert
I had to eat dessert in church again...but it was a smores crunch bar so I was okay with crunching a little bit. And yes...that is the smores bar hiding in my purse. I tried to be discreet. ;)


Besides my pumpkin rant, today was a good day! I am thrilled to see what tomorrow brings...it's Wednesday! I love Wednesdays. Why? Well, I love going to church on Wednesday nights and I am also halfway through the week! Plus...I hear rain is coming!!!
