Okay, so there were no tricks today...only treats—healthy treats (for me at least). Now, in the past this time of year, I would eat every piece of chocolate I could find. And since my family usually bought the giant bag of mixed chocolate from Costco, I helped myself to countless chocolates. This year, however, no candy was bought for our house. Instead we went to my grandparents house and passed out candy there. It was perfect for me—I had no urge to eat the candy and I wasn't tempted after the night was over by all the leftovers. And the best part was, I didn't feel left out at all! God is good. :)
Breakfast
I started out the day with a chilly pineapple mango smoothie. For some reason I cannot get past this strange taste that this smoothie has, so I did not add it to my next Medifast order. It's not bad, it's just not my favorite. Oh, just fyi, since it is Halloween, I created all the pictures to have a cute Halloween theme.
Morning Snack
It's blueberry muffin time again! I wasn't too thrilled about these at first, but now I am liking them more and more. It's funny, because when I cook these at work, the kitchen ends up smelling like blueberries for a couple hours. Oops! Oh well, at least it's a good smell.
I also added a tad more water than I should have, and the muffin poured over the sides. But it all worked out...still tasted the same.
I am think I am having more fun than I should with the Halloween themed photos. :)
Lunch
I couldn't wait to show you what I created for lunch! I made stuffed Jack O' Lantern Peppers! I basically chopped a pizza flavored burger (you can used ground turkey) and mixed it with cabbage and sauteed them together until the cabbage was soft. I then cut the top off of the pepper and scooped out the seeds and stuffed it with the cabbage mix. So good! Confession...I actually didn't eat the whole pepper, but ate enough so I could round out my green portion of the meal.
Medifast Lean and Green Breakdown:
lean: pizza burger
green: 1/2 cup of orange pepper, 1 cup of cabbage
healthy fat: 1 teaspoon of olive oil
Afternoon Snack
Lunch kept me quite full until my afternoon snack, which is a first. The portion size on the pretzels are smaller than the other Medifast meals, so it was perfect.
Dinner
It was then time for dinner...and also the time for candy to be passed out...but...I had no desire to eat it! I mean, it was right in front of me in a giant bowl, and I was not tempted whatsoever! Instead I ate a cinnamon roll crunch bar. So much better than a tiny piece of chocolate...which, if I were to be honest, would have easily turned into ten pieces, if not more.
Dessert
Take two with the pancake muffin...drumroll please...they came out delicious! Way better than the normal prepare method. I actually ended up cutting the two halves in half again, making 4 mini "biscuits". I also put one of them in the toaster for a bit, and oh my goodness, so stinkin' good! I will be making these again for sure.
So yeah, that was my day and my first Halloween not binging on candy! Woo-hoo! I am so ready for week three. Bring it!

day thirteen...when cravings attack
The day I dreaded finally came...the day I crave food all day long. Even after I finished a Medifast meal or a lean and green meal, I felt like I needed to chew on something else. Thankfully, I had some sugar-free gum. I was able to quench those cravings with a prayer to the Lord while chewing on a stick of gum.
At one point I thought to myself, why am I really doing this program? I can eat a juicy burger right now. Why don't I? It took me a while to truthfully answer my own thought, but then I realized that this is a lifestyle change. Eating well and frequently is not just a 6 month plan, but it is my life from now on. I am sure in the future I can splurge every once in a while, but right now, I just can't. There is no need for a mental debate. I simply cannot have that food because I am changing my life for the better and this will only take me back three steps.
Before I put something in my mouth, I need to ask myself: Will this benefit me? Will this help me further my healthy lifestyle or pull me back into the depths of my past sin? It is either going to be one or the other, and I hope—with the Lord's help—that I choose to further benefit my health.
Oh, and I made it through the whole day without caving into my temptations and stuck to my Medifast plan...in case you were wondering. It makes me so happy to know I stood my ground and said no to those harmful foods—gives me hope for the future. :)
Breakfast
This mornings breakfast is one of my all-time favorites: a dark chocolate shake. You know what it reminds me of? A Starbucks Frappuccino. And I would be lying if I said I didn't miss those. But this is a great substitute. Maybe I will add a shot of espresso to it one day and make it a mocha "frappuccino".
Morning Snack
Two words: oatmeal cookies. These are so good! I am not a fan of the oatmeal by itself, but when you mix it with a little bit of baking soda and cinnamon and bake for about 15 minutes, they are delicious. Click here for the recipe.
Lunch
I had my go-to lunch today. A simple salad with meatballs and light Italian dressing. Can't go wrong with this combo. Delish!
Afternoon Snack
This is when the trouble started. Well, it really began after I ate my salad for lunch. It wasn't that I was hungry, but I felt that I needed to chew on something. I was going a little crazy by the time my snack time came around. This is another reason why I love this plan so much...I get to eat every 2-3 hours. It's perfect! I usually do not like the Parmesan puffs, but they weren't all that bad. I think they were the ideal crunchy snack I needed at the moment, and satisfied my craving to chew something.

Dinner was my favorite meal of the day by far. I am pretty sure the s'mores bar is my favorite Medifast food option. I savor each bite. Love it! I will be so bummed if they ever discontinue it.

After dinner I went to church and was satisfied for the 2 hours I was there. However, I was definitly ready for something sweet when I got home. So I whipped up a mocha milkshake. It totally hit the spot. Perfect ending to a rough day.
Well there you have it, another day complete! I have almost completed 2 weeks already! Time has flown by...I feel like I just began this plan. And the best part is, is that I am not tired of the food whatsoever. I actually find myself looking forward to my next Medifast meal. I definitely prefer them over my lean and green meal. Go figure. :)
But before I leave you, let me tell you a funny story that happened tonight. After church, when I was making my milkshake, my parents and I caught our cat trying to sneak outside. We do let him outside at times, but he is mainly an indoor cat. But he sees what door my dad opens for him to get out and how he opens the door (via the handle). So we turn around and he is standing on his back legs trying to open the door with his paws! It was the cutest thing! Sadly he was unsuccessful (shocker), but it made for a good laugh. day twelve...take every thought captive
"...bringing every thought into captivity to the obedience of Christ" (2 Corinthians 10:5).
When you are having a tempting thought, immedietly take it captive and release it to the Lord. Trust me, He will get rid of it for you—but only if you are willing. I have found that singing a song of worship when a tempting thought comes into my mind helps me to switch my thoughts from sin to praise. Next time you are struggling, stop and pray. Sing a song. Begin reading the Bible. There are so many options. But it is up to you to make that step to stop and do what pleases the Lord.
Breakfast: calorie burn cappuccino
Have I mentioned before how much I enjoy these? Well, I do...a lot. It not only wakes me up a bit but the taste is delicious and it keeps my stomach full all morning. I wasn't hungry whatsoever when it was time for morning snack.
Morning Snack: blueberry soft bake
Yes, I know this looks unappetizing, but it is quite the opposite. It was soft, chewy and and bursting with blueberries (which seem to hide within the soft bake). Perfect meal after a wonderfully hot cappuccino.
Lunch: chicken salad
Lunch was amazing. I sauteed some chopped chicken with a few pieces of purple onion and it turned out perfectly moist and packed full of flavor. So simple, yet so delicious.
Medifast Lean and Green Breakdown:
Lean: 6 ounces of chicken (breast)
Green: 2 3/4 cup of romaine lettuce, 2 tablespoons of purple onion
Healthy Fat: 2 tablespoons of light Italian dressing
Afternoon Snack: cheese pizza bites
This crunchy snack is so good! Highly recommend it to anyone looking for something to crunch on. My only suggestion is to have some water with you because they are kind of dry. ;)
Dinner: attempted pancake muffin turned into giant pancake
So I attempted to make a pancake muffin in a mug, but...I accidentally put twice the amount of water the recipe called for, therefore, it did not work...like not at all. In my attempt to salvage my gooey mess, I decided to pour the half-cooked batter into a pan and fry it up like I would a normal pancake. It worked to an extent, but obviously it looks hideous. I almost didn't post this picture, but then I thought, hey, we all make mistakes...why not just post it. We can all learn from our mistakes. The next time I try and make a muffin out of pancake mix, I will think twice before I add the water.
Dessert: caramel crunch bar
I actually had to eat this in the middle of church tonight. I thought it would be okay because the bar is soft, but I was wrong...it still had some crunch to it. I began eating very slowly so I would not annoy the people around me, but it still had a loud crunch at every bite. Oh well, you do what you gotta do.
Overall, today was a fantastic day. I was able to put my focus on the Lord when my mind began thinking fleshly thoughts. I thank the Lord that I made it through yet another day—to God be the glory!

Meatless Meatball Casserole
I have another recipe for you all! Now, before I begin explaining how to make it, let me first say that you can substitute the meatless meatballs for any kind of meatball you like—it does not have to be vegetarian.
With that said, let's get started!
Step One: Gather your ingredients
What you will need:
1 1/2 cups of cauliflower
1/4 cup of marinara sauce
1/4 cup of light mozzarella cheese
6 meatballs
1 teaspoon of olive oil
pepper and other spices you may want to add
Step Two: Pour a teaspoon of olive oil in the cauliflower bag and cook in the microwave. While that is cooking, place the meatballs in an oven safe dish and being baking (follow the directions on the bag). I baked my frozen meatballs for 10 minutes.
Step Three: Puree the cauliflower using either a food processor or an immersion blender. I used the later and it worked like a charm. Oh! and before you blend, make sure to add some spices that you like. I just added pepper and garlic flakes.
Step Four: Once you have the cauliflower at a desired consistency, spread it evenly on the bottom of an oven safe dish.
Step Five: Once the meatballs have cooled, cut them in half.
Step Six: Place the halved meatballs evenly on top of the cauliflower puree.
Step Seven: Pour the marinara sauce evenly on top of the meatballs and sprinkle the cheese on top of that.
Step Eight: Put the dish under the broiler and bake it for about 4 minutes. Keep a close eye and make sure to switch sides so the cheese evenly melts. You want it to bubble and brown a bit.
Step Nine: Let it cool so you don't burn the top of your mouth and enjoy your delicious faux potato and meatball casserole!

Lean: Trader Joe's Meatless Meatballs (6), 1/4 cup of light mozzarella cheese
Green: 1 1/2 cups of cauliflower, 1/4 cup of Trader Joe's marinara sauce
Healthy Fat: 1 teaspoon of extra virgin olive oil
Lastly, I know it looks like a lot, but the dish I used was fairly shallow and small. But it will fill you up and keep you full for pretty much the rest of the day. :)

day eleven...the Father's warmth

Have you ever had one of those mornings when you wake up and just want to stay in bed all day long? That was me this morning. My alarm went off and I immediately felt the chill overcome my body as I began to get out of my bed. I stood for a moment and hopped right back under my covers just so I could feel the warmth once more. I did not want to leave—I knew that as soon as I did, I would be cold and uncomfortable.
This is the way I should be with the Lord. He keeps me warm and happy as He wraps His arms around me. I never want to leave His presence, and I know that as soon as I do, my life will become stale, cold, and uncomfortable. Now, I can prolong this misery, or I can jump right back into His open arms as He begins to warm me up once again. God will always be there for me—whether I am walking with Him or if I have strayed. He is there. Arms open wide, just waiting for me to return.
Just think about that as you go about your day today. Stay in the Father's warmth.
Now, I totally spaced this morning and didn't get a picture of my breakfast or morning snack, but I became more diligent as the day went on. :)
But for the record, I had a mocha shake for breakfast and a peanut butter crunch bar for my morning snack. Both delicious!
Lunch: Meatless Meatball Salad
These meatless meatballs from Trader Joe's are amazing. You simply bake them for ten minutes and they come out crisp on the outside and soft on the inside. It paired very well with some romaine lettuce and Italian dressing.
Medifast Lean and Green Breakdown:
Lean: meatless meatballs
Green: romaine lettuce
Healthy Fat: Italian dressing
Afternoon Snack: BBQ Bites
These are still not my favorite, but I am eating them anyways because I did buy them—and no food will go to waste on this program. So I sucked it up and ate them. But hey, it kept me satisfied for the next couple hours.
As I got home from work, the chill began to creep through my thick sweater. And what better way to warm up after a rainy day than to eat hot and steamy comfort food. So I pulled out the perfect Medifast meal...mac and cheese.
Dinner: Macaroni and Cheese
Mac and cheese isn't that pretty to photograph, but I tried and will get better over time. But anyways, it tasted way better than it looked and it hit the spot. Dinner perfected.
And of course, I go in the complete opposite direction for dessert and make myself an icy cold peanut butter milkshake. I have to admit, these milkshakes are becoming one of my absolute favorite things to eat. It tricks my mind into thinking I am drinking a calorie filled milkshake, when in reality, it is just my Medifast soft serve blended with some water and ice. Love it!

day ten...we will overcome

I learned a lesson tonight. And I learned it through a song—God can work in any way He likes, and tonight He used Jeremy Camp to teach me that lesson. I went to the tribute tonight honoring Pastor Chuck Smith and being taught a lesson was the last thing on my mind. I figured it would be a time of remembering and just enjoying the speakers and music. But oh no...the Lord likes to work all the time...even at a tribute.
So anyways, Jeremy Camp was singing this song called "Overcome". And in the song he sings "every victory is Yours". Every victory that I experience is only done because of the Lord. He is the reason I have victory in those tough moments. He is the reason I was able to say no to fast food when my whole family was eating it after the tribute. I just sat there drinking water. And you know what? It wasn't hard at all! All glory to the Lord alone. Jeremy Camp then goes on to sing, "We will overcome by the blood of the Lamb, and the word of our testimony, everyone overcome". This is just an encouragement for me concerning the future. I will overcome my addiction. I will overcome my destructive sin habits. But it's not because I am so wonderful and great, but rather because Jesus died on the cross for me and had victory over sin. Since He already paid the price, I too can have victory through Jesus Christ.

Okay, now onto the eats for today. My meal times were a bit off because I slept in this morning, but I still got my 5 medifast and 1 lean and green meal in.
Breakfast: Pineapple Mango Smoothie
Wonderful start to the chilly morning. I am loving this weather by the way. I absolutely just love the cold...and rain! We are supposed to be getting rain for the next two days! Bring on the warm chunky sweaters and boots!
Morning Snack: Meatball Casserole
So technically this is my lunch, not morning snack. I made a comfort food lean and green meal. So delicious! It is a meatless meatball casserole. Basically it is just mashed cauliflower on the bottom, meatless meatballs on the top and then a little bit of marinara sauce and mozzarella cheese on top. I know it looks like a lot, but it was a small, shallow pyrex dish—perfect portion size for one. Kept me pretty full for the rest of the day!

Do you notice the background? It's my blog post! I was actually eating dessert while writing this post. I also added a tad more water then the directions called for, and it turned out great! Usually it is pretty hard and crumbly, but tonight it was soft and chewy. Loved it!

day nine...what's your reward?
Today was the day of the men's conference. Yes, I am a girl who went to a men's conference, but I am going for work. This was actually my 12th men's conference. But I like it, keeps me busy and on my feet—aka...I am burning calories all day long. Can't go wrong with that!
As far as my eating goes, I did very well! All glory to the Lord! But, I will admit it wasn't easy. In years past, men's conferences were always a day full of eating—before, during, and especially after. At the end of the day we would all usually pack up and then go to a restaurant and eat our little hearts out. It was my way of rewarding myself for working such a hard day. I mean, I deserved it, right? Well, not today. My body does not deserve to be tortured by eating food that will harm it.
This year, I rewarded myself, but in a completely different way. No food was involved. Instead, I went home, took a nice hot bath, put on my comfy pj's and simply relaxed. So much better than gorging myself. I felt better and was relaxed at the same time. Win-win for me! But I will admit, it was hard to say no to dinner (especially when it was at my all-time favorite restaurant). Now, I could have gone and ordered a lean and green meal, but I don't think I am quite ready to venture out into the restaurant world. I would rather cook the food myself anyways—that way I know exactly what I am putting in my body. Most places serve healthy food, but load it with seasonings and salt.
With that said...here is what I did eat today...
Breakfast: dark chocolate shake
So I woke up at 5am this morning and got ready to work the men's conference. Right before I left, I whipped up a shake and took it with me. Perfect on-the-go meal. I used the starbucks cup so I could just throw it away and not worry about bringing home my cup...in case you were wondering.
Morning Snack: calorie burn cappuccino
Love, love, love this drink. I had mixed feelings about it earlier, but I ended up liking it. I already have my next Medifast order in the cue and this is definitely on it. Plus, it lasts a while and keeps you full for quite some time.
Lunch: apple cinnamon muffins
Once again, I had to postpone my lean and green meal until I got home. So for lunch I had the same muffins I ate yesterday. They are way better than just the oatmeal in my opinion. I will probably be making these until I run out of oatmeal. :) And yes, this is the same picture from yesterday.
Afternoon Snack: cinnamon and brown sugar cereal crunch
This isn't the prettiest picture, I know and I am sorry. I literally took it while helping a customer. But a picture is a picture, right? Hopefully I can make up for it tomorrow. :)
Dinner: turkey salad...and a sugar-free monster
Well, back to the same old dinner. But that's okay. While everyone went out to eat, I stayed home and ate this. And while I was eating, I was thinking about how I would be feeling if I did go out and eat what my flesh wanted. I would have had momentary pleasure but then guilt would have set in for the rest of the night. It just is not worth it. I also had a sugar-free zero monster with my dinner. I kind of figured this was my "treat". I try not to have diet cokes and sugar free drinks, but on occasion I will. And today was an occasion for me.
I then went outside and saw this...
I was speechless. I love sunsets like these. I just felt like the Lord was saying, I'm the ruler of this world. I know all about you and what you are going through. You will make it through this time. Just hold fast to Me and My Word. That was all I needed to hear. God is with me. What more do I need?
Dessert: S'mores Crunch Bar
This bar was the perfect ending to a wonderful day. As you can tell, I had a little bit of fun with this picture. I think it's cute. who doesn't like a cute little bird on a bough? Plus, the s'mores bar is just too amazing not to have a bird. ;) I really like this bar and can see myself eating this everyday for the rest of my life. Just kidding...sort of.
I hope your day was as blessed as mine! Remember...rewarding yourself does not need to involve food. Go get a pedicure instead. ;)

Pizza Boats
I finally have a recipe for you all!
I tried this last night, and it was divine. Definitely a "comfort food" kind of meal. I really don't even like zucchini but I loved this, and I promise you will too.
Step One: Gather your ingredients. You will need mini zucchini, pizza flavored meatless burger, light mozzarella cheese, and marinara sauce. All these ingredients can be bought at Trader Joes—that is where I do most of my shopping. If you can't find the pizza burger, you can use any meatless burger or ground turkey.
Ingredients:
1 Trader Joe's Pizza Meatless Burger
1/4 cup of marinara sauce
1 ounce of light mozzarella cheese
about 12-15 mini zucchini
1 teaspoon of olive oil (not pictured)
Step Two: Pour about a teaspoon of olive oil into the bag and steam the mini zucchini in the mircrowave or on the stove.
Step Three: Cut the ends off of the zucchini and then take a sliver off of one side. Just cut the skin mainly.
Step Four: While letting the zucchini cool down, go ahead and crumble up the burger. It really just falls apart.
Step Six: Add the marinara sauce and mix it up.
Step Seven: Scoop out a bit of the zucchini flesh. You can add the it to the meat if you like or just save it for something else.
Step Eight: Pour the burger mix into each zucchini "boat" and then sprinkle the cheese onto them.
Step Nine: Cook it in the microwave for about 1 minute and 30 seconds—basically until the cheese melts. Just keep an eye on it. And then enjoy!
That's it! It is a fairly easy recipe and I hope you enjoy it as much as I did!
